As a new Mum, it’s taken me a while to accept my new lifestyle.
No more Saturday nights partying till all hours of the morning and sleeping most of Sunday. Now Saturday night consists of maybe a glass of wine, doing some work and crawling into bed around 11:00pm and waking up at 7:00am (or earlier) to be greeted by a cheery little toddler. I must admit I don’t miss the shady Sunday mornings, but what I do love now is cooking for the boys to start off our weekend.
Here’s my first attempt of a little ‘food porn’ photography.

Apple and Cinnamon Mini Muffins
Preheat oven to 180°/160° fan forced. Line two 12-hole (1-tablespoon/20ml) mini muffins pans with paper cases. Sift 3/4 cup self-raising flour and 1 teaspoon ground cinnamon into medium bowl; stir in 1/3 cup firmly packed brown sugar and 1/4 cup rolled oats. Stir in combined 1/4 cup milk, 1/4 cup apple juice, 1/4 cup vegetable oil and 1 egg. Add 1/4 cup coarsely grated, peeled apple; stir gently to combine. Divided mixture into paper cases. Bake muffins about 15 minutes. Stand 5 minutes before turning, top-side up, onto wire rack to cool.
